The recent study by the researchers instigated on how long the bacteria can survive in certain foods causing the increased number of outbreaks of food borne diseases which are related to desiccated foods.

The researchers found that harmful bacteria not only survive in dry foods, such as cookies or sandwich crackers but can remain for longer periods.

Beuchat said that the foods with low moisture content which are isolated.
Focusing on cookie and cracker sandwiches, the salmonella found in cookies and crackers, the researchers filled with four types of stuffing and placed them into storage.
The researchers tried using cheese and peanut butter stuffing for the cracker sandwiches and vanilla and chocolate filling for the cookie sandwiches.
This is the variety that found in grocery stores or vending machines, Beuchat said.
